So...what is (or was) for dinner?
Tonight, I got lazy (imagine that) and I am currently eating Uncle Ben's Long Grain & Wild Rice. I nuked it & according to the box, I'm eating 3 servings - but, since it's my whole dinner, I think it's okay... Hey, it's less than 600 calories & only 1.5 grams of fat total...it's a healthy meal, right?

Re: So...what is (or was) for dinner?
I'm actually kind of proud of myself for being able to eat this boxed wild rice again - one time, a few years ago, I made it on the stove, put it in a bowl, ate several bites, and then noticed there were worms in there (like maggoty worms - turns out it was expired)! Okay, I'm done - I only ate about 2.5 servings...lol!

Dangit! I totally forgot to get some steak from my parents' - mom said they had some...pooh! Guess I'll have to settle for Chicken Kiev & my mashed taters (I leave the skin on, add cheese & garlic & seasoned salt) & a Caesar salad...

Re: So...what is (or was) for dinner?
Tonight is leftovers (I always make at least 2-4 dinner servings at once) - last night I made baked Salmon fillets (with a bit of butter and mesquite powder and minced garlic on top - yum!) and plain white rice and some fresh baked (from frozen...lol) French baguette bread...it was delicious & I can't wait to eat it again tonight!

Re: So...what is (or was) for dinner?
Um, since I just got this, and it's lunch time, I'll give you last night's dinner at Red Lobster (with my lovely Andrea):
Appetizer:
Calamari and Vegetables
Stuffed Mushrooms
Clam Strips
For me:
Salad and a bowl of Bayou Gumbo
For Andrea:
Crab Linguini al fredo
It was such a full table, we had to bring most of it home!

Re: So...what is (or was) for dinner?
spaghetti and garlic rolls( i made these out of frozen already cooked dinner rolls that were leftover from another nights dinner). They stay good in the freezer, just cut in half and put butter and garlic salt on them, then heat in oven.
